After graduating from the Culinary Institute of America, Chef Kevin Thompson began his cooking career in the army where he served for three years. He returned to his roots in Southwest Louisiana and has since served his signature cuisine at Harrah’s Casino, Paragon Casino, Isle of Capri and L’Auberge Casino Resort. Kevin began his career at the Golden Nugget Casino in Lake Charles in 2017 where he is now serving as Executive Chef in Cadillac Mexican Kitchen & Tequila Bar, home of legendary Mexican cuisine.

From the front of house to the back, Chef Paul Brantley has worked in the industry for more than twenty years.

For most of a decade Paul worked in support roles at various fine dining establishments, providing him with intimate insight into the inner workings of hospitality and how a chef sees the world. A musician and visual artist, he was drawn to the creativity that the medium of food allowed and eventually began paving his own unique culinary path, cooking in restaurants around Nashville.

When Paul landed at The Southern Steak & Oyster as a Sous Chef in 2012, he felt like he was home. He soon took over as Chef de Cuisine, where he oversees the production of one of the south’s most successful restaurants.
