Chef Lyle Broussard is known for his Cajun and Creole flavors and his passion for southwest Louisiana culture and cuisine, dating back to time spent perched next to his grandmother’s stovetop where he developed a passion for food. Chef Broussard‘s love of his local heritage carries over to the menu with authenticity, deep flavors and a simplicity that allows the ingredients to do the talking.
Fin & Pearl
Chef Shawney Severns joined Fin & Pearl as Chef de Cuisine in April 2018. In that time, she has wowed guests with her unique and beautiful preparations of fresh, sustainably caught seafood. Chef Severns studied Culinary Management at Pensacola State College before jumping into restaurant work in Pensacola at Polonza Bistro, followed by The Capital Grille and Black Sheep in Jacksonville. Most recently, Chef Severns worked her way up from line cook to interim Executive Chef at Nordstrom Bazille in Jacksonville, and moved to Nashville in 2016 to accept the Executive Chef position at The Nordstrom Grill. Chef Severns’ creativity and originality results in dishes that keep guests on their toes and coming back for more.
